 Ingredients:

  • 8 oz (225g) spaghetti
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 can (14 oz/400g) diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Fresh basil leaves, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions:

  1. Cook Spaghetti:

    • Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water before draining. Set aside.
  2. Prepare the Sauce:

    • In a large skillet or saucepan, heat the olive oil over medium heat. Add minced garlic and chopped onion. Sauté for 2-3 minutes until the onion becomes translucent.
  3. Add Spices:

    • Stir in the red pepper flakes, diced tomatoes (with juices), tomato paste, and dried oregano. Season with salt and black pepper to taste. Bring the sauce to a simmer.
  4. Simmer:

    • Let the sauce simmer for about 10-15 minutes, stirring occasionally, until it thickens slightly. If the sauce becomes too thick, you can add a splash of the reserved pasta water.
  5. Combine Pasta and Sauce:

    • Add the cooked spaghetti to the sauce. Toss well to coat the pasta evenly with the sauce. If needed, add more pasta water to loosen the sauce.
  6. Serve:

    • Divide the spicy spaghetti among serving plates. Garnish with freshly chopped basil leaves and grated Parmesan cheese if desired.
