- 4 salmon fillets (about 6 ounces each), skin on

- Salt and black pepper

- 2 tablespoons of olive oil

- 2 spoons of fresh lemon juice

- 2 cloves of garlic, finely chopped

- 2 tablespoons of fresh onion, chopped

- 1/4 cup plain Greek yogurt

- 1 tablespoon of mayonnaise

- 1 tablespoon Dijon mustard

- Lemon wedges for serving

- Sprays new pepper for garnish

1. Preheat the grill:

   - Preheat your grill to medium high heat (about 400°F to 450°F). Make sure the grill grates are clean and lightly greased so that the onions don't stick.

2. Salmon season:

   - Pat dry onion fish with a paper towel and season both sides generously with salt and black pepper. Drizzle olive oil over the fillet and cover evenly with batter.

3. Grilled Salmon:

   - Place grilled grilled salmon fillet skin side down. Cover and grill, uncovered, for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork. Do not hit the onion more than once so that it does not break.


4. Make lemon curd sauce:

   - While the fish is grilling, prepare the lemon dill sauce. In a small bowl, combine fresh lemon juice, minced garlic, chopped onion, Greek yogurt, mayonnaise, and Dijon mustard. Season the sauce with salt and pepper to taste.


5. Serve:

   - After the onion is cooked, transfer the fillet to a liver plate or a separate plate. Generously spoon the lemon dill sauce over the grilled salmon fillet.
